Salmon with Seasoned Baked Potatoes and Carrots

I had a request from one of my visitors for a homemade recipe on the blog.

My husband is the cook around our parts, so I will let him explain to you how he made this pretty simple dinner...


The dish I prepared for last night's dinner was oven-baked salmon with garlic carrots and potatoes, topped with oregano cream sauce

Preparation Time: 1 hour

Sour Cream
Half and Half
Olive Oil
Chicken Bouillon
Seasoning of your Choice: Oregano, Salt, Pepper
Garlic cloves

 *** If you want this to be a little more low-calorie, I would substitute the potatoes and/or carrots for leafy green vegetables. You can top with balsamic vinaigrette instead of the cream sauce we used (although the sauce is what really makes this yummy!)


1. Pre-heat oven at 400 degrees. 


2. Peel potatoes and carrots; cut them in half if they are big. Place the potatoes and carrots on a foil sheet.

3. Cut the garlic cloves into smaller pieces and sprinkle it over the potatoes and carrots. Top it off with a sprinkle of some olive oil and your favorite seasoning.

4. Fold the foil sheet over the potato/carrot mix. Now its ready to go into the oven for 50 mins to an hour.


5. While the potatoes are in the oven we can get the salmon ready. The salmon only needs to be in the oven for 15-20 min depending on how big the piece is. All you need to do with the salmon is to put it on a foil sheet, put some olive oil on it and season it like you want, I used pepper and salt.


6.  The sauce is very easy to make and also very tasty. Just blend sour cream and half & half in a pot while on medium heat.

7. Put a spoon of chicken bouillon in the mix and also season with oregano spices.

8. Now just stir it around for 2 min and you've got a cream sauce!
